How do the dual admin/voice interfaces on the ApplianX gateway function?

The two interfaces are teamed together. If both are connected, the Applianx can receive on either but the OS will decide which one to send with. This means there will be no disruption if one link goes down as the ARP tables don’t need to be updated.
